I used two chicken breasts, which can easily be subbed for probably anything else, but that's what I had in the freezer. I grabbed a big green bell pepper from the garden, before the summer heat could burn it up, and I also grabbed a red bell pepper, half a red onion, and some minced garlic from the fridge.

| Too good to be true. |
After cutting up the vegetables, I threw them into a skillet on medium-low heat, along with just over a teaspoon of minced garlic (probably more, because I am passionate about garlic), and started cutting the chicken into strips. After the chicken was cut, I put it in the pan and turned the heat up to about medium, and moved everything around in the pan frequently. I seasoned everything with some coarse ground black pepper, garlic powder, seasoning salt (which was partially made up of garlic salt, paprika, and onion powder), and some cayenne pepper, to taste.

I cooked everything until the chicken completely done, and had browned a little on the outside. As a side-dish or topping (whatever seemed best), I made some pre-packaged Spanish rice, and whipped out some burrito-size flour tortillas. I didn't put any rice in mine, but it was still really great, especially considering that I had no idea what I was doing. Everyone else in the house loved them too, and it's a good thing that there was enough food to go around (enough for four or five people, even).
